RECIPE: Mini Italian Turkey & Bacon Meatloaves


Okay… so i’m pretty sure it’s no surprise that bacon is one of my favorite things to eat. I mean come on people… what can be better than a crispy piece of bacon?! I needed a meal I could prepare ahead of time and pop into the oven after a long day at work and these mini meatloaves do the trick. These single serving portion sized patties are easy to stick in the fridge before I leave for work and are perfectly thawed by the time I get home. Plus, any excuse to eat bacon after 11:00 am is all good in my books.


What You’ll Need:

2 Eggs

3/4 Cup Almond Milk

Coconut Oil

1 1/2 lb Lean Italian Ground Turkey

1 Pkg (6oz) Bread Crumbs

3 Chopped Green Onions

6 Slices Turkey Bacon

Time To Make The Magic Happen:

Set your oven to 375ºF to preheat.

Whisk the egg and almond milk in a large bowl until blended. Add in the rest of the ingredients and fold the ground turkey and bread crumbs until mixed throughout. Separate the meat into 6 even portions and shape into 1 inch thick round patties. Wrap 1 slice of turkey bacon around each patty. If you wont be making all 6, wrap the ones you would like to freeze individually in plastic wrap and a zip lock bag. You can store these up to 3 months!

Line a baking sheet in foil and lightly grease with coconut oil to avoid sticking and burning.

Bake for 40 – 45 Minutes.

Alright…unless you completely messed up above, or got distracted and started frying up slices of bacon for a little pre-meal snack (I’ve been guilty of this once – or twice), the meatloaf will have a thin crust on the outside and be perfectly moist on the inside.

Serve on wheat angel hair pasta and marinara sauce. enjoy!
